Maison Valette is based in Chaintré in the south of Burgundy between Mâcon and Beaujolais. In total there is 8 hectares under vine all worked organically since the early 1990s. Harvesting is done by hand and the wines undergo long barrel ageing in old oak before bottling without fining filtration or sulphur.
Le Clos de Monsieur Noly is the top wine from Valette made from a single vineyard of 80+ year old vines in Chaintré rich in Bajocian limestone and clay. After harvest the wine ages on lees for 10-12 years in neutral oak barrels. Deep amber-gold with brilliant coppery reflections in the glass, it's oxidative yet vibrant with aromas of baked orchard fruits, dried apricot, marmalade, white truffle, toasted brioche, salted caramel, crushed flint, and beeswax. Unbelievably rich and concentrated on the palate, with a profound textural weight that feels almost like a light red wine in its structure and phenolic grip. The long élevage softens the edges while concentrating intense flavours of preserved lemon, ginger, honeycomb, roasted nuts, and a striking, razor-sharp limestone acidity that cuts straight through the richness.
