Mas des Colibris is a biodynamic domaine in the Causse d'Aumelas region of Languedoc run by former professional rugby player Sebastien Galtier. Sebastien has 12 hectares in total, all farmed organically since 1999 and surrounded by olive groves, pine forest and scrubland. Grapes are hand-harvested, fermented with indigenous yeasts and Sebastien uses biodynamic preparations to stimulate the biological life of the soil and strengthen the vine and its natural defences.
Clair de Lune is Chardonnay from the Saint-Guilhem le désert IGP with just under a third aged in oak and the rest in stainless steel. Bottled without sulphur or other additions, it's rich but well balanced with acacia, peach and baking spice aromas, lovely texture and plenty of length.
