Nibiru is the project of Josef Schenter and Julia Nather, located in the very north of Kamptal. Farming is organic, with all wines fermented with indigenous yeasts and bottled unfined and unfiltered with sulphur used only at bottling where necessary.
The Grundstein Riesling is made from grapes grown on schist/amphibolite in Nibiru’s top site in their home village of Thürneustift. The terraces Josef selects for this cuvée are the youngest vines in the vineyard, at an average age of 40 years old (whereas 80+ year-old vines go into the top-tier ‘Amphibolit’ cuvée). Whole-cluster pressed, then spontaneously fermented in stainless steel, racked only once and kept on fine lees eight months, until bottling. Unfined and unfiltered with minimal sulphur at bottling. Dry, linear and mineral with a distinct tangerine/orange peel profile. Very refreshing with just a touch of texture, and a saline finish.
