Nicolas Jacob was born and raised in the Jura, and after gaining experience with Laurent Macle of the esteemed Domaine Macle followed by a stint with Jean-Francois Ganevat, ventured out on his own in 2015 with a single hectare of vines in l'Etoile. He now has around 5 hectares of Chardonnay, Savagnin, Pinot Noir, Poulsard and Trousseau, all of which are farmed with minimal intervention.

Chardonnay from a small plot of old plot of vines planted in 1947 in the limestone soils of Rotalier and aged on the lees for 22 months in demi-muids. Profoundly saline, mineral and crystalline with creamy citrus, smoke and spice notes on the impressively long palate.
