Nicolas Jacob was born and raised in the Jura, and after gaining experience with Laurent Macle of the esteemed Domaine Macle followed by a stint with Jean-Francois Ganevat, ventured out on his own in 2015 with a single hectare of vines in l'Etoile. He now has around 5 hectares of Chardonnay, Savagnin, Pinot Noir, Poulsard and Trousseau, all of which are farmed with minimal intervention.

Chardonnay from vines planted in the 1980s in Liassic marl soils. The grapes were de-stemmed and pressed off to age on the lees in old oak barrels for 22 months. Smoky reduction and intense preserved lemon aromas with vibrant acidity and some light oxidative notes.
