Nicolas Jacob was born and raised in the Jura, and after gaining experience with Laurent Macle of the esteemed Domaine Macle followed by a stint with Jean-Francois Ganevat, ventured out on his own in 2015 with a single hectare of vines in l'Etoile. He now has around 5 hectares of Chardonnay, Savagnin, Pinot Noir, Poulsard and Trousseau, all of which are farmed with minimal intervention.

Chardonnay from a parcel of vines planted in 1983 in the grey marne soils in L'Étoile, pressed directly and aged on the lees in old oak for 22 months. Reductive smoke and sesame notes giving way to intense lemon, apple and yellow plums.
