Offbeat is the West Country based winemaking project of Daniel Ham which began in 2018. Daniel works as naturally as possible with hybrid varieties suited to the English climate, ferments are wild and little if any sulphur is used. Production is small with only 2,000 bottles of each cuvée made.
Cascade is an orange wine made from seven white varieties from small vineyards across Southern England, all handpicked, foot stomped and macerated for between 2 and 10 days before fermenting in a combination of amphora, old Burgundy barrels and stainless steel. The result is a bright, aromatic orange wine with notes of hedgerow, elderflower and citrus blossom.
