Offbeat is the Wiltshire based winemaking project of Nicola and Daniel Ham which began in 2018. Nic & Dan work as naturally as possible with hybrid varieties suited to the English climate, ferments are wild and little if any sulphur is used. Production is small with only 2,000 bottles of each cuvee made.

Many Moons is a blend of Pinot Blanc and Chardonnay from grapes grown in blue clay soils in Crouch Valley, Essex, hand-picked, spontaneously fermented and aged in new oak foudre for 2 years before bottling without sulphur or or other additions. Aged for another 2 years in bottle before release, it's gastronomic and elegant with a mineral edge.
