Domaine Tony Bornard Savagnin 'Les Chassagnes'
Tony Bornard is based in the famed Jura of Pupillin where he farms 7 hectares organically. In the cellar he works with minimal intervention, fermenting with indigenous yeast, eschewing sulphur and other additions and bottled without fining or filtration.
Les Chassagnes is Savagnin aged in a 2,400 litre oak barrel. Made in the topped up, non-oxidative style, it's savoury and precise with hints of almond, grapefruit, baking spices and earthy minerality. Long and linear on the palate with tremendous length and vigour.
