Ramon Jane Cap de Pardals
Ramon Jane's family have grown grapes in Penedes for generations but until 2006 all production was sold on to the big Cava houses in the region. Ramon initially struck out on his own by producing a range of organic grower Cavas from his family vineyards before going fully natural in 2016 - pure grape juice from all indigenous varieties, wild fermented and bottled without any added sulphur, other additions or filtration.
Cap de Pardals is a pet nat made from 100% Mando, a grape nearly instinct before Ramon and small group of Penedes winemakers brought it back from the brink. A medley of Summer berry fruits on the nose and palate with fine bubbles and pronounced salinity.
