Selvadolce is a small biodynamic domaine run by Aris Blancardi right on the coast of Liguria in Bordighera. After working as a horse veterinarian, Aris came back to the family business, taking over his father’s work and improved the farming practices by looking for alternative ways to grow flowers. He first learnt the basics of biodynamic farming in Langhe, then followed up with a course led by Nicholas Joly that convinced him to start making wine at Selvadolce.
From the 2014 vintage, this is the rare local variety Rossese, fermented and aged in old oak for 10 months before a long rest in bottle. A bit like a cross between Nebbiolo and Syrah with black pepper, violet, rose and blackberry aromas and rugged tannins that have been tamed after 8 years.
