Skyborry Knighton Cider
Adam and Dani Davies of Skyborry make cider and perry in a small shed tucked away in the Teme Valley near Knighton, Powys. All the fruit is hand harvested from trees around 60-80 years old in orchards around the Wye Valley. Ferments with native yeasts are long and slow and they bottle without fining, filtration, sulphur or other additions.
Knighton is the first cider made from apples grown in the Davies' own orchard that they planted in 2010. A blend of Dabinett, Yarlington Mill, Kingston Black, Browns, Stoke Red and Frederick, it's bright and well carbonated from re-fermentation in bottle with plenty of ripe fruit.
