Adam and Dani Davies of Skyborry make cider and perry in a small shed tucked away in the Teme Valley near Knighton, Powys. All the fruit is hand harvested from trees around 60-80 years old in orchards around the Wye Valley. Ferments with native yeasts are long and slow and they bottle without fining, filtration, sulphur or other additions.
Pommage is a blend of Stoke Red, Kingston Black, Bulmer’s Norman, Chisel Jersey and Dabinett all harvested from an orchard near Hay on Wye. Naturally sparkling with some residual sweetness that balances out the bright acidity and tannins perfectly.
