Zsolt Sütő has 12 hectares of land near the village of Strekov in Slovakia. He cultivates his vines by hand and trains them as bush vines to force their roots to go deeper and thus less sensitive to drought. In the cellar the wines ferment spontaneously in barrels and open top vats without any intervention.
For Zsolt's Frankovka whole bunches were de-stemmed and pressed, the juice was fermenting spontaneously in open wooden vats for over 2 weeks. Then, the wine was transferred to 500l Zemplén oak barrels, where it aged on the lees for 6-8 months. Bottled unfined, unfiltered and without the addition of SO2, it has light and smooth tannins with incredibly deep notes of pine forest and dark berries. Intense and gentle at the same time. Pairs beautifully with game.
