Sophie and Thierry Chardon of L'Aumonier have been based in Touraine since 1996, working with the Sauvignon Blanc the area is famed for as well as Chenin Blanc, Chardonnay, Côt (Malbec), Gamay and Cabernet Franc. Farming has been organic since 2006 and biodynamic since 2021 with the soil a mixture of the argile and silex.

This is Sophie and Thierry's gorgeous traditional method fizz made from 100% Chenin Blanc aged for 12 months on the lees before disgorgement. Rich with fine, persistent bubbles and aromas of nougat, green apples and lime.
