Theo Coles of The Hermit Ram has been making wine at the Limestone Hills vineyard in Canterbury, New Zealand, since 2012. The vines are naturally farmed and the wines are made with the minimal amount of additions and long, slow indigenous yeast fermentations.
This is Theo's ancestral method (pét nat) sparkling wine made from a blend of Pinot Noir, Pinot Blanc, Chardonnay and Sauvignon Blanc. A bright, fresh, gently sparkling wine soft bubbles and ripe stone and tropical fruit flavours.
