Timothée Stroebel's family originally came from Alsace, settling in Champagne after the Second World War and planting their first vines in the early 60’s in Villers Allerand, a small 1er cru village tucked in Montagne de Reims, where they still farm today.
From the 2017 vintage, Héraclite is a blanc de noirs made from 100% Pinot Noir (Tim lost all his Pinot Meunier in 2017 usually destined for this cuvée) fermneted with indigenous yeasts and aged in old oak barrels for 12 months. With zero dosage, this is a searing, ineffably taut and precise Champagne with tremendous purity and complexity.
