Grapes: Chasselas Doré
Vinos Ambiz is the project of Fabio Bortolomei who grew up in Scotland to Italian parents before moving to Madrid 20 years ago. He works with a number of under-rated indigenous varieties including Doré, Malvar, Airen, Albillo and Chelva. He vinifies with a bare minimum of intervention in the winery using a mixture of amphora, stainless steel, plastic, oak and concrete, rarely producing more than a 1000 bottles of each cuvee.
Doris comes from 40 year old vines of the rare variety Chasselas Doré. An intense, hazy and rustic orange wine with masses of fleshy peach and apricot and savoury aromas of cashew, exotic spice and earth.
