Vinos Ambiz is the project of Fabio Bortolomei who grew up in Scotland to Italian parents before moving to Madrid 20 years ago. He works with a number of under-rated indigenous varieties including Dore, Malvar, Airen, Albillo and Chelva. He vinifies with a bare minimum of intervention in the winery using a mixture of amphora, stainless steel, plastic, oak and concrete, rarely producing more than a 1000 bottles of each cuvee.
This is Sauvignon Blanc but unlike any Sauvignon we've tasted before! Fermented on skins and aged in acacia barrels, it's powerful and savoury with apricot, lychee and melon aromas leading to a long, tobacco spice finish.
